Personal Veggie Fritattas!

These Frittatas are so yummy and filling! If you are dairy free, skip the cheese! Don’t like bell red peppers?! Replace them with green or orange! Like mushrooms? Add some in! Have fun with these and ENJOY!!

Personal Veggie Fritattas!

A personal sized egg cupcake type breakfast!
Ingredients
  • One chopped zucchini
  • One chopped red bell pepper
  • 1 cup chopped onion (I used about half white onion and half green onion)
  • 1 cup broccoli
  • 10-12 eggs
  • 1 cup grated cheese
  • 2 Tbsp butter
Instructions
  1. Sautee zuccini, bell pepper and onions with butter in a sautee pan.
  2. While the veggies are cooking, grease a 12 cup muffin pan. Preheat over to 350 F.
  3. Beat the eggs in a mixing bowl, fold in cheese, set aside.
  4. Divide the broccoli between the 12 muffin cups.
  5. Top the broccoli with the sauteed veggies dividing between the 12 muffin cups.
  6. Divide the egg mixture between the muffin cups being careful not to overflow.
  7. Bake for 18-20 minutes or until puffed and beginning to brown.
  8. Remove from muffin pans and enjoy!
Notes
I use a small cookie scoop to pour the egg mixture over the veggies.
