Loaded Potato Soup!

I hope you enjoy this Loaded Potato Soup! It is NOT healthy by any stretch of anyone’s imagination, but it is OH SO delicious!!!

Loaded Potato Soup!

A rich, creamy potato soup loaded with cheese, bacon and green onions!
Ingredients
  • About 10 medium potatoes
  • 1 pound sharp cheddar cheese, grated
  • 1 pound bacon
  • 4-5 green onions
  • 3-4 cups chicken (or vegetable) stock
  • 2-4 Tbsp. tapioca flour/starch
  • 2 cups milk
  • For topping:
  • grated cheese
  • sliced green onions
  • sour cream
  • crumbled bacon
Instructions
  1. Peel & cube potatoes, cover in water in a large pot and bring to a boil. Simmer for 10-15 minutes or until soft. Drain and set aside in a large bowl.
  2. Cut bacon into bite sized pieces with kitchen shears or a sharp knife and cook in the same pot used for the potatoes. As bacon cooks, slice the green onions and smash the potatoes, leaving a few lumps.
  3. When the bacon is almost done, add the sliced green onions and cook about 5 more minutes. Do NOT drain the bacon grease!
  4. Add the tapioca flour to the bacon, onions and grease stirring to combine until well absorbed. Start with 2 Tbsp and add more as needed being careful to not add too much. This is what will make your soup thick!
  5. Add milk all at once, cook and stir until slightly thick and bubbly.
  6. Add potatoes & 2 cups of the stock, bring to a simmer adding more stock as needed until desired consistency is reached.
  7. Add cheese to simmering soup one handful at a time. Stir as you add each handful making sure each addition of cheese is completely melted before adding more.
  8. Serve topping with additional cheese, green onions, bacon and sour cream!
Notes
I used russet potatoes, but yukon gold make it even better!
Be sure to add the cheese slowly. This will avoid any grittyness.
