Gluten free corn bread muffins that are… Moist!!! No joke!

Oh my yummy!! I MUST share!!

I don’t like gluten free baking because- let’s just face it- it’s dry and tastes funny. BUT I was really craving corn muffins and soup. I made my loaded potato soup because it was pretty simple to make it gluten free and I bought a box mix of gluten free corn bread.

Now here’s where it got amazing… I followed the directions on the box, but before adding it to the muffin cups, I added one can of creamed corn and 3 Tbsp. of honey!!!
