Gluten Free Green Bean Casserole (with homemade Cream of Mushroom!!!)

I don’t like cream of mushroom soup. However, I love when it’s cooked with chicken or a few times a year in green bean casserole! So first things first… I experimented with a cream of mushroom recipe (Folks- about 4 ounces of mushrooms is plenty! Don’t buy 24 ounces like I did!!) I used regular cows milk since I didn’t have rice milk and it worked great. I also omitted the pepper because it makes me choke. So yeah.

My recipe.

Ingredients:
-1 recipe cream of mushroom soup (see link above)
-2 cans of cut green beans (drained)
-1/2 cup milk (I used regular cows milk, others may work too)
-1/4-1/2 cup diced onions
-1- Tbsp olive oil
-salt & pepper (if it doesn’t make you choke) to taste

First things first- make your cream of mushroom.

And there you have it! It took longer to chop the mushrooms than it did to cook this up into a “can” of condensed soup!!

Next step: place your olive oil and onions in a pan and cook well. I had mine all flavorful and dark! Yummy!! (As you start this, pre-heat your oven to 350* F)

Once your onions are done, combine the soup, onions, milk, green beans and salt/pepper if desired in a 1.5 quart casserole dish. And stir until combined.

Once combined, place in your pre-heated oven for 25 minutes. Stir, then bake 5 more minutes.

And there you have it! Gluten free green bean casserole!!! I ate two helpings… I had to do quality control, you know! Share and enjoy!!!

For those wondering what happened to the other 20 ounces of mushrooms… I chopped and bagged them in 4oz portions! They are in the freezer awaiting their turn to become a “can” of soup!
